What the MOV container actually contains

A .mov file is a QuickTime container. The audio track inside is almost always AAC, but screen recordings made on Mac can carry PCM (uncompressed) audio, and professional cameras like the Sony FX3 and Canon R5 record MOV files with high-bitrate AAC or even LPCM at 48 kHz. What you extract as MP3 depends entirely on what codec was recorded. The container extension tells you very little about the underlying audio quality.

Extracting audio means the entire video stream is discarded. The tool reads only the audio atom in the QuickTime container and re-encodes that data as MP3. This is faster than a full transcode because the video frames are never decoded.

Audio source type and recommended MP3 output bitrate

iPhone video (AAC 256 kbps recorded audio)
Use 192–256 kbps MP3. The source is already high-quality AAC; match or stay close to the source bitrate to avoid stacking lossy generations.
Mac screen recording with system audio (PCM 44.1 kHz)
PCM is uncompressed, so any MP3 bitrate from 128 kbps up produces good output. Use 192 kbps for a clean voice-over or UI walkthrough audio.
DSLR or mirrorless camera MOV (AAC or LPCM 48 kHz)
LPCM sources justify 256–320 kbps MP3 output. The original recorded audio is broadcast-grade and deserves a high-bitrate encode.
GoPro or action cam footage (AAC 128 kbps)
128 kbps MP3 is sufficient; the source bitrate does not justify encoding higher.
Drone footage (AAC 96 kbps — often very low quality)
Drone microphones pick up prop wash almost exclusively. Extract at 96 kbps and expect ambient rotor noise rather than usable audio.
